Serves 3
Ingredients:
10 oz red enchilada sauce
6 oz cooked, shredded chicken breast
1/2 cup Mexican cheese, shredded
6 soft flour or corn tortillas
1/2 cup Mexican cheese, shredded, for topping
Cilantro (optional)
Directions:
Cook chicken and shred.
Pour 5oz of enchilada sauce into baking dish.
Mix shredded chicken, 1/2 C of cheese, and half of remaining sauce in a bowl.
Spoon filling into tortillas, roll, and place into baking dish on top of sauce.
Pour remaining sauce on top of enchiladas, then top with remaining cheese.
Cover with foil, bake at 350F for 20 minutes. Uncover, then bake for another 10 minutes.
