An amazing recipe from Jon in Australia!! You will never look at regular fried rice the same way again!! This recipe scales up easily to feed more hungry people!
Serves: 2 | Prep Time: 15 min | Cook Time: 10 min
Ingredients:
1 Cup of Uncooked White Rice
2 Eggs
1 (or 2) Garlic Cloves
2 Slices of Bacon (use more if your bacon slices are small)
2 Green Onions
Soy Sauce
Vegetable/Canola Oil for Frying
Boil rice in water until done, as per the packet instructions. Drain and set aside.
(If you have a rice cooker or microwave rice cooker, follow those instructions)Crack 2 eggs in a bowl, and whisk till fluffy (omelet - like)
Heat frypan with a little oil, pour in whisked eggs, turning, cooking both sides to appear like a flat omelet
Remove omelet to chopping board, and cut vertically and horizontally to produce 1 1/2 cm "omelet pieces"… Set aside
Take 2 pieces of bacon, cut vertically and horizontally to produce 1 1/2 cm "bacon pieces"… Set aside
Take 2 green onions, clean any excess stringy bits, remove any roots… then chop into 1/2 cm rounds (don't use all the green, it gets chewy the further down you go – say half way)… Set aside
Cooking:
Heat oil in frypan or wok (make sure the pan is big or that it has high sides!)
Crush 1 or 2 cloves of garlic and add to fry pan stirring (don't let it burn, it will get bitter)
Throw in Bacon pieces, and stir around in oil and garlic until nearly done
Add cooked boiled rice to pan and and mix through, warming it back up (break up any clumps as you mix through the oil, garlic and bacon)
Add 1 (or 2 depending on taste) tablespoons of Soy Sauce, and stir through quickly, coating the rice
Throw in chopped egg pieces, stirring though the rice
Throw in chopped spring onion, stirring though the entire mix
Take off the heat, and serve in bowls
Note: Can be kept for a day, in a container covered in cling wrap in the fridge and reheated
Alternatives/Additions:
Throw in Frozen Peas at step 5
Throw in Cooked small prawns or shrimp at step 6 (though you might want to not use bacon also!)
Throw in Bean shoots at step 7
